<p>This is a new occasional series of articles where I’ll share what I’m eating, to help jump start your meal ideas.  I know it’s hard to come up with meal ideas, especially when you’re switching to a new way of approaching food.</p>

<div class="twitterbutton" style="float: left; padding-right: 5px;"><a href="http://twitter.com/share" class="twitter-share-button" data-count="vertical" data-text="What I’m Eating" data-via="DiaVickery" data-url="http://acugateway.com/WordPress/what-im-eating/" data-lang="en" data-related=""></a></div>{"id":242,"date":"2012-07-18T22:31:16","date_gmt":"2012-07-19T05:31:16","guid":{"rendered":"http:\/\/acugateway.com\/WordPress\/?p=242"},"modified":"2012-08-16T08:05:15","modified_gmt":"2012-08-16T15:05:15","slug":"what-im-eating","status":"publish","type":"post","link":"http:\/\/acugateway.com\/WordPress\/what-im-eating\/","title":{"rendered":"What I\u2019m Eating"},"content":{"rendered":"<p>\u2026this week.\u00a0 This is a new occasional series of articles where I\u2019ll share what I\u2019m eating, to help jump-start your meal ideas.\u00a0 I know it\u2019s hard to come up with meal ideas, especially when you\u2019re switching to a new way of approaching food.<\/p>\n<p>So let\u2019s get to it.\u00a0 Wednesdays are delivery days for my box of fresh organic produce.\u00a0 I get weekly deliveries from Farm Fresh to You*.\u00a0 These are happy days since my meals are easy \u2013 just eat whatever came in.\u00a0 The rest of the week requires a little more thought.<\/p>\n<p><strong>Breakfasts<\/strong> \u2013<\/p>\n<p>This is where habit and consistency really come into play.\u00a0 I have basically the same thing every morning, with slight variations.<\/p>\n<p><strong>Greek Honey Yoghurt<\/strong> with:<br \/>\nlocal honey &amp; sesame seeds<br \/>\nfresh blueberries and a little raw sugar<br \/>\nraisins or mixed dried fruits<br \/>\nand so on . . .<br \/>\n<strong>Cranberry juice (roughly 50\/50) with freshly squeezed citrus juice<\/strong>.\u00a0 Oranges, grapefruit, tangerines, tangelos, Mineolas, mandarins \u2013 you name it, I\u2019ll squeeze it**<br \/>\n<strong>Hot tea<\/strong>.\u00a0 Usually Constant Comment but I occasionally stray to Earl Gray or Prince of Wales.<\/p>\n<p><strong>Lunch<\/strong> \u2013<\/p>\n<p>I usually end up having my largest meal at lunch, despite the advice that one should \u201cEat like a King in the morning, a Noble at mid-day and a pauper in the evening\u201d.\u00a0 Looking at this week, it\u2019s been a veggie week because most of the meals were:<\/p>\n<p><strong>Salad!<\/strong>\u00a0 But we\u2019re not talking a wimpy side salad here.\u00a0 I make a large bowl of salad with whatever is on hand, which can include cheese, avocado, fresh tomatoes (right now \u2013 it\u2019s tomato season), seeds or nuts, leftover meat or sliced lunch meats, olives, capers and pickles, sliced veggies and eggs.\u00a0 And, of course, a nice dressing \u2013 just not a gallon of it.\u00a0 I happen to like the flavour of lettuce so a little dressing goes a long way.<br \/>\n<strong>Leftover Pulled Pork.<\/strong>\u00a0 We have a wonderful grill at a local market every Saturday and Sunday.\u00a0 At least once a month we go there and get a small (ish) container of whatever sounds good.\u00a0 Right now, it\u2019s the pork.\u00a0 They also grill chicken and beef though, so our smoky, grilled protein choices aren\u2019t limited.<br \/>\nSince I try to walk the walk, I avoid bread with my BBQ, which means I can actually have more of the yummy meaty goodness \u2013 and that\u2019s a good thing!<br \/>\n<strong>Sliced Baby Bok Choy with garlic and chicken stock<\/strong>.\u00a0 I got baby Bok Choy in my veggie delivery last week, so I sliced two of them up and saut\u00e9ed them in a little butter with garlic and some chicken stock.<\/p>\n<p><strong>Dinner<\/strong> \u2013<\/p>\n<p>Most of the week these were closer to snacks than meals.\u00a0 Except one day when my husband &amp; I had:<\/p>\n<p><strong>Tri-Tip Cesar Salad<\/strong> from the excellent restaurant The Habit.\u00a0 Highly recommend!<\/p>\n<p>Apart from that meal, I had:<strong><br \/>\n2 eggs over medium, with garlic &amp;
